Conversations in Grace Kitchens with Miss Jamaica World 2015
Following her victory in the 2015 Miss Jamaica World competition on August 15, at the Montego Bay Convention Centre, the newly crowned Dr Sanneta Myrie has been on a whirlwind of interviews, public speaking engagements, and has attended numerous events. However, one thing that would shock most about this country girl is that she is not only an academic, but she knows her way around the kitchen.
Dr Myrie recently invited celebrity chef Charles Mattocks and the camera crew of Conversations in Grace Kitchens to join her as she created one of her favourite meals - coconut steamed fish with sweet mashed potatoes. Enjoy.
Coconut Steamed Fish
Ingredients
1 pack of fish fillet
1 onion
Butter
Thyme
Scallion
2 sweet peppers
black pepper
Salt
Scotch bonnet pepper
Grace All-Purpose Seasoning
Grace coconut milk powder
Sweet Mashed Potatoes
11/2 lbs of sweet potatoes
garlic butter
evaporated milk
salt
Method:
1. Season one pack of fish fillets with Grace Fish Seasoning or any seasoning of your choice and refrigerate for a minimum of eight hours.
2. Cut up one large sweet pepper, three medium-size carrots, one onion, two large tomatoes, two stalks of scallion, one large Scotch bonnet pepper and sprig of thyme and set aside.
3. Coat a skillet with oil and place over medium heat.
4. SautÈe seasonings for 2-5 minutes over medium flame.
5. Add 1 cup of water to packet of Grace Coconut Milk powder and mix and set aside.
6. Placed pre-seasoned fish fillet in skillet with seasoning, leave for about two minutes to let seasoning absorb then add coconut milk.
7. Cover skillet and leave on medium flame for 10-15 minutes. At intervals, season to taste.
Sweet Mashed Potatoes
1. Peel and boil 2lb sweet potatoes
2. When cooked, mash with garlic and plain butter, 11/2 tablespoon and 1/2 teaspoon salt.
