This Christmas season, mixologist Theo Miller is sharing a selection of cocktails inspired by tropical fruits, bringing the essence of summer to the festive season. Built with syrups and citrus and finished with a splash of Red Stripe Flavours, each drink carries a light, effervescent touch that enhances rather than overpowers its core profile. Together, the cocktails bring colour and familiar Jamaican flavours to the Christmas table.

KIWI MANGO SPLASH

The kiwi mango splash opens the line-up on a refreshing note. Vodka and peach schnapps form a smooth base, while kiwi syrup and muddled fresh kiwi bring vibrant green notes to the glass. Lime juice cuts through the sweetness, and a splash of mango-flavoured beer gives this cocktail a lift and adds refreshment.

“This one is about refreshness,” Miller shared. “It’s light enough to start the evening, but still packed with flavour.”

INGREDIENTS

1 oz Smirnoff Vodka

1 oz peach schnapps

2 oz kiwi syrup

3 muddled kiwi

.5 oz lime juice

.75 oz simple syrup

LYCHEE MELON COOLER

The lychee melon cooler leans into elegance. Apple vodka and pink gin create a delicate base, layered with lychee syrup and peach schnapps. Lime juice brightens the profile, while melon-flavoured beer adds a gentle fizz that makes the drink easy to return to.

1.5 oz apple vodka

1 oz pink gin

1 oz lychee syrup

1 oz peach schnapp

.75 oz simple syrup

.5 oz lime juice

MIDNIGHT SORREL

No Jamaican Christmas is complete without sorrel, and midnight sorrel offers a modern cocktail interpretation of the beloved holiday staple. The vodka and strawberry daiquiri mix creates a fruity foundation, accented with bitters and lime juice. A float of merlot deepens the colour and flavour, while sorrel-flavoured beer brings festive familiarity to every sip.

“It’s rich, but not heavy, perfect for later in the night,” Miller explained.

1 oz Smirnoff vodka

1.5 oz strawberry daiquiri mix

3 dashes bitters

.5 oz simple syrup

.5 oz lime juice

.75 oz merlot

LEMON BREEZE

The lemon breeze is designed for those who prefer a sharper sip. Mango daiquiri and coconut rum introduce subtle sweetness, balanced by apricot brandy liqueur and fresh lime juice. A hint of Blue Curaçao deepens the colour, while lemon-flavoured beer ties it all together with a clean, zesty finish.

“It’s refreshing without being flat,” Miller noted. “The beer gives it movement.”

1.5 oz mango daiquiri

1 oz coconut rum

.75 oz apricot brandy liqueur

.75 oz lime juice

.5 oz Blue Curaçao

Red Stripe Lemon beer

Each cocktail is built by shaking the ingredients with ice and finished with its respective Red Stripe Flavours beer, served over ice. Together, these four cocktail creations blend familiar flavours with nostalgic creativity, adding an extra layer of cheer to the holiday season.
