PAN glory propels 2024 champ Totlyn McDonald to new heights

Totlyn McDonald, the 2024 CB PAN chicken champion, has unlocked a new chapter in her life. From the serene hills of Leith Hall, St Thomas, this culinary star’s once-hidden jerk spot has been transformed into an even more popular site for locals and visitors alike.

“Life has significantly changed,” she shared with a smile. “People now know my name, know my food, and they’re coming from all over to try it. I’ve even started catering for businesses across St Thomas, and people want me to jerk chicken for many different events. I also do a BBQ every last Friday of the month, while on the second Friday of the month, I have a stew peas special and also, every Friday, I try to do something different. This has been a blessing.”

Though she would go on to win the 2024 PAN chicken competition, McDonald was once too shy to step forward, until her family, especially her sister Melissa McDonald, pushed her to take the leap.

“I was hesitant at first,” McDonald admitted. “But, with the encouragement I got — especially from my sister, I entered. And I won! That’s why I tell others — don’t be afraid to go after your dreams. Do your best, and the sky’s the limit.”

Her sister, she says, has been her rock through it all.

“Melissa is behind me 100 per cent. She’s always there — up and down the road with me, never missing a step.”

She also attributes her success to the sponsors of the competition and her secret ingredient.

“It’s all in how I season and marinate the chicken. But, most importantly, I cook with love. I think, when you love what you do and you cook from your heart, it automatically comes out in the cooking, and I have my little secret ingredients and my secret sauce that makes it great.”

A part of her development and growth is seen in her business expansion.

“Before the competition, I usually jerk chicken at my little jerk spot in Leith Hall, and I am still at that location. I am grateful, however, because I have grown and have managed to build it out some more, so I have expanded.”

She shared some advice for her fellow female chefs.

“Follow your heart and your dreams. You belong here, too,” said McDonald.

The 2025 PAN final will take place on August 31 at Jamaica College in St Andrew, and, for the first time, will see the naming of a PAN chicken champion and a Copperwood Pork PAN champion.
